Abstract

ABSTRAK Telah dilakukan penelitian untuk mengembangkan minuman fermentasi berbahan dasar air beras merah organik menggunakan bakteri probiotik. Tujuan dari penelitian ini untuk menilai kualitas serta keamanan produk melalui berbagai uji laboratorium. Parameter yang dianalisis meliputi pH, total plate count (TPC), keberadaan Escherichia coli, dan aspek organoleptik (rasa, aroma, dan warna) pada empat interval waktu (T0, T12, T24, T36). Fermentasi dilakukan dengan menggunakan bakteri probiotik yang diinkubasi pada suhu 40°C. Pengukuran pH dilakukan untuk memantau perubahan tingkat keasaman selama proses fermentasi. Analisis TPC digunakan untuk menghitung jumlah total koloni bakteri, sedangkan uji Escherichia coli dilakukan untuk memastikan keamanan mikrobiologis produk. Uji organoleptik dilakukan oleh panelis untuk menilai preferensi rasa, aroma, dan warna minuman. Hasil penelitian menunjukkan bahwa pH minuman berangsur menurun hingga mencapai stabilitas pada T36, yang mengindikasikan aktivitas fermentasi yang optimal. Hasil uji TPC menunjukkan peningkatan signifikan pada jumlah koloni bakteri, mencapai puncak pada T36 dengan jumlah 1,4 x 10⁴ koloni/mL. Tidak ditemukan adanya kontaminasi Escherichia coli pada semua sampel, menunjukkan bahwa produk aman untuk dikonsumsi. Uji organoleptik mengungkapkan bahwa mayoritas panelis menilai rasa, aroma, dan warna minuman dalam kategori suka hingga sangat suka, dengan hasil analisis Anova One Way menunjukkan perbedaan signifikan antar waktu fermentasi (p<0,05). Kesimpulannya, minuman fermentasi air beras merah organik yang diproduksi menggunakan bakteri probiotik menunjukkan kualitas sensori yang baik dan aman untuk dikonsumsi. Proses fermentasi yang dikontrol dengan baik menghasilkan produk dengan pH, TPC, dan karakteristik organoleptik yang memenuhi standar kualitas yang diharapkan. ABSTRACT A study has been conducted to develop a fermented drink based on organic red rice water using probiotic bacteria. The objective of this study is to assess the quality and safety of the product through various laboratory tests. The parameters analyzed include pH, total plate count (TPC), the presence of Escherichia coli, and organoleptic aspects (taste, aroma, and color) at four-time intervals (T0, T12, T24, T36). Fermentation was carried out using probiotic bacteria incubated at a temperature of 40°C. pH measurements were taken to monitor changes in acidity levels during the fermentation process. TPC analysis was used to count the total number of bacterial colonies, while Escherichia coli testing was conducted to ensure the microbiological safety of the product. Organoleptic tests were conducted by panelists to assess preferences for the taste, aroma, and color of the drink. The results showed that the pH of the drink gradually decreased until reaching stability at T36, indicating optimal fermentation activity. TPC results showed a significant increase in the number of bacterial colonies, peaking at T36 with a count of 1.4 x 10⁴ colonies/mL. No Escherichia coli contamination was found in any of the samples, indicating that the product is safe for consumption. Organoleptic tests revealed that the majority of panelists rated the taste, aroma, and color of the drink from liked to very liked, with Anova One Way analysis results showing significant differences between fermentation times (p<0.05). In conclusion, the fermented drink based on organic red rice water produced using probiotic bacteria shows good sensory quality and is safe for consumption. The well-controlled fermentation process results in a product with pH, TPC, and organoleptic characteristics that meet the expected quality standards.
