Abstract

ABSTRAK Perkembangan Ilmu Pengetahuan dan Teknologi (IPTEK) saat ini semakin modern sehingga mendorong perkembangan perekonomian yang sangat pesat. Hal ini juga memicu persaingan antar usaha semakin ketat, sebagaimana terlihat dari semakin banyaknya coffee shop yang berdiri. Salah satunya Dunno Coffee. Dunno Coffee merupakan coffee shop milik perorangan yang bergerak dalam bidang makanan dan minuman. Dalam hal ini peneliti menggunakan metode pengendalian persediaan Safety Stock, Economic Order Quantity, dan Reorder Point dengan tujuan untuk mengoptimalkan penggunaan biaya produksi sehingga lebih efisien. Penelitian ini bertujuan untuk mengetahui metode pengendalian persediaan Coffee Shop di Kota Bandar Lampung. Jenis penelitian ini merupakan penelitian Field Reasearch dan termasuk kedalam penelitian deskriptif kualitatif dengan menggunakan data primer dan sekunder. Teknik pengumpulan data melalui metode observasi, wawancara dan dokumentasi. Teknik analisis data dalam penelitian ini menggunakan reduksi data, penyajian data, dan penarikan kesimpulan. Hasil analisis menunjukkan apabila menggunakan metode pengendalian persediaan Economic Order Quantity maka biaya produksi coffee shop dapat lebih optimal dan ekonomis. Dalam hal ini dibuktikan dari hasil perhitungan Total Inventory Cost yang diperoleh lebih efisien dibandingkan dengan metode konvensional yang digunakan coffee shop. Dari perhitungan Economic Order Quantity yang dilakukan Coffee Shop juga dapat menentukan jumlah Safety Stock yang harus dimiliki serta dapat menentukan Reorder Point dari setiap jenis bahan baku guna menunjang kelancaran proses produksi. This has also triggered increasingly tighter competition between businesses, as can be seen from the increasing number of coffee shops being established. One of them is Dunno Coffee. Dunno Coffee is an individual coffee shop that operates in the food and beverage sector. In this case, researchers used the Safety Stock, Economic Order Quantity, and Reorder Point inventory control methods with the aim of optimizing the use of production costs so that they are more efficient. This research aims to determine methods of controlling Coffee Shop inventory in Bandar Lampung City. This type of research is Field Research research and is included in qualitative descriptive research using primary and secondary data. Data collection techniques use observation, interviews and documentation methods. The data analysis technique in this research uses data reduction, data presentation, and drawing conclusions. The results of the analysis show that if you use the Economic Order Quantity inventory control method, coffee shop production costs can be more optimal and economical. In this case, it is proven by the results of calculating the Total Inventory Cost which is more efficient than the conventional method used by coffee shops. From the Economic Order Quantity calculations carried out by the Coffee Shop, you can also determine the amount of Safety Stock that must be owned and can determine the Reorder Point for each type of raw material to support the smooth production process.
