Abstract

ABSTRAK Status gizi merupakan salah satu faktor yang berpengaruh pada kualitas sumber daya manusia terutama terkait dengan kecerdasan, produktivitas, dan kreativitas. Status gizi baik dapat terwujud apabila asupan gizi yang diperlukan terpenuhi dari makanan yang dikonsumsi sehari-hari. Masalah kesehatan dan gizi dapat terjadi pada semua kelompok umur termasuk santri Pondok Pesantren. Pemerintah telah menetapkan undang-undang dan peraturan-peraturan berkaitan perbaikan gizi kesehatan bagi pondok pesantren. Oleh karena itu tujuan penelitian ini untuk mengevaluasi program perbaikan gizi Pondok Pesantren di Provinsi Lampung. Rumusan masalah penelitian ini adalah bagaimana evaluasi konteks (context evaluation), evaluasi masukan (input evaluation), evaluasi proses (process evaluation) dan evaluasi hasil (product evaluation) program perbaikan gizi Pondok Pesantren di Provinsi Lampung. Penelitian ini menggunakan metode penelitian deskriptif dengan pendekatan paradigma fenomenologis atau interpretatif (metode kualitatif) menggunakan model CIPP. Pengumpulan data dilakukan dengan observasi partisipan (participant observation), wawancara mendalam (in-depth interviews) dan diskusi kelompok terarah (focus group discussion) dan dokumentasi. uji keabsahan data menggunakan metode triangulasi. Hasil penelitian; 1) Program perbaikan gizi pondok pesantren hakekatnya sudah terlaksana walaupun undang-undang dan peraturan-peraturan yang berlaku tentang program perbaikan gizi di pondok pesantren tersebut belum menerima sosialisasi dari pihak-pihak terkait (Context), 2) Pondok pesantren memiliki cukup sumber daya manusia dan sarana prasarana namun belum diberdayakan secara optimal untuk program perbaikan gizi (Input), 3) Pondok pesantren belum memasukan pendidikan gizi dalam kurikulum pesantren (Process), 4) Masih ditemukan santri pondok pesantren mengalami beban gizi ganda atau double burden malnutrition, rerata asupan gizi kurang dan penjamah belum dilengkapi pakaian kerja (Product), 5) Pondok pesantren perlu melakukan Intervensi (Intervention) pada evaluasi context, input, process dan product, yaitu; (a) intervensi gizi spesifik yaitu intervensi terkait peningkatan gizi dan kesehatan, (b) Intervensi gizi sensitif yaitu intervensi memutus rantai inter-generasi masalah gizi, masalah penyakit tidak menular dan kemiskinan (c) Intervensi kreatif yang mendorong gerakan meningkatkan dan mempertahankan status gizi remaja melalui empat pilar (4P) strategi kreatif yaitu remaja sebagai penggerak, pengganda, pemberi pesan dan pemberian motivasi. . Kata Kunci; Evaluasi, Program, Gizi, CIPPI, Pesantren viii ABSTRACT Nutritional status is one of the factors that influence the quality of human resources, especially those related to intelligence, productivity, and creativity. Good nutritional status can be realized if the required nutritional intake is met from the food consumed daily. Health and nutrition problems can occur in all age groups including Islamic boarding school students. The government has enacted laws and regulations related to improving health and nutrition for Islamic boarding schools. Therefore, the objective of this study is to develop a nutrition improvement program for Islamic boarding schools in Lampung Province. The formulation of the study is how to evaluate the context evaluation, input evaluation, process evaluation, and product evaluation of the nutrition improvement program for Islamic Boarding Schools in Lampung Province. This study used a descriptive research method with a phenomenological or interpretive paradigm approach (qualitative method) using the CIPP model. Data was collected by means of participant observation, in-depth interviews, and focus group discussions and documentation. The validity test of the data using the triangulation method. The result of the study; 1) The nutritional sttaus improvement program for Islamic boarding schools has essentially been implemented even though the applicable laws and regulations regarding nutrition improvement programs in Islamic boarding schools have not received socialization from related parties (Context), 2) Islamic boarding schools have sufficient human resources and infrastructure but has not been empowered optimally for nutrition improvement programs (Input), 3) Islamic boarding schools have not included nutrition education in the Islamic Boarding School curriculum (Process), 4) It is still found that Islamic boarding school students experience a double nutritional burden or a double burden of malnutrition, the average nutritional intake lacking and the handlers are not equipped with uniform (Products), 5) Islamic boarding schools need to conduct interventions on the evaluation of contexts, inputs, processes and products, namely; (a) specific nutrition interventions, namely interventions related to improve nutrition and health, (b) sensitive nutrition interventions, namely interventions to break the intergenerational chain of nutritional problems, non�communicable diseases and poverty (c) Creative interventions that encourage the movement to improve and maintain the nutritional status of adolescents through four pillar (4P) of creative strategy, namely teenagers as movers, multipliers, message givers and motivational providers.
