Abstract

ABSTRAK Kombucha merupakan minuman hasil fermentasi dari starter kombucha berupa nata yang berasal dari simbiosis antara bakteri Acetobacter sp. dan khamir Saccharomyces sp. dengan medium yang digunakan untuk membuat minuman sehari-hari seperti teh, kopi, dan rosella. Antibakteri merupakan zat yang dapat menghambat pertumbuhan atau bahkan membunuh bakteri. Beberapa bahan alami seperti kombucha dan daun sirsak (Annona muricata L.) memiliki kandungan yang berperan sebagai antibakteri. Tujuan dari penelitian ini yaitu untuk mengetahui kemampuan kombucha daun sirsak (Annona muricata L.) sebagai antibakteri terhadap bakteri Propionibacterium acnes . Penelitian ini merupakan penelitian kualitatif yang dilakukan dengan metode difusi sumuran untuk melihat zona hambat yang terbentuk dari kombucha daun sirsak (Annona muricata L.). Hasil dari penelitian ini menunjukkan zona hambat pada konsentrasi gula 10% (b/v) sebesar 7,3 mm, konsentrasi 13% (b/v) sebesar 7,6 mm, konsentrasi 16% (b/v) sebesar 9,6 mm, dan pada konsentrasi 19% (b/v) didapat diameter zona hambat tertinggi yaitu sebesar 10,6 mm, Hasil menunjukkan bahwa semakin tinggi konsentrasi gula yang diberikan, semakin besar diameter zona hambat yang terbentuk. Kata kunci : Antibakteri, Daun sirsak (Annona muricata), Kombucha, Propionibacterium acnes iii ABSTRACT Kombucha is a fermented drink from kombucha starter in the form of nata which comes from a symbiosis between the bacteria Acetobacter sp. and yeast Saccharomyces sp. with the medium used to make everyday drinks such as tea, coffee, and rosella. Antibacterial is a substance that can inhibit the growth or even kill bacteria. Some natural ingredients such as kombucha and soursop leaf (Annona muricata L.) contain antibacterial properties. The purpose of this study was to determine the ability of soursop leaf kombucha (Annona muricata L.) as an antibacterial against Propionibacterium acnes bacteria. This research is a qualitative research which was conducted using the well diffusion method and looked at the inhibition zone formed from soursop leaf kombucha (Annona muricata L.).The results of this study showed that the inhibition zone at 10% (b/v) sugar concentration was 7,3 mm, 13% (b/v) concentration was 7,6 mm, 16% (b/v) sugar concentration was 9,6 mm and at 19% (b/v) concentration the highest inhibition zone was 10,6 mm. The results showed that the higher the given concentration, the wider the inhibition zone formed. Key words : Antibacterial, Kombucha, Soursop leaf (Annona muricate L.), Propionibacterium acnes
